Vegetable Pulao

Flavorful and tasty vegetable pulao.. Try it and share your comments.

Serves:2-3 people
Preparation Time : 30 minutes
Cooking Time: 15 minutes

INGREDIENTS:
Basmati Rice - 1 cup (soaked in cold water for about 30 minutes)
Water - 2 cups
Milk - 1/2 cup
Ghee- 2 table spoon

VEGETABLES:
Onion- 1/2 (Diced finely)
Carrot- 1/2 (chopped)
Beans - 5-6 no.s(chopped)
Cauliflower - 1/2 cup(Chopped)
Peas-1/4 cup(frozen or fresh)
Garlic - 3 to 4 cloves
Ginger - 1 tablespoon(Chopped finely)
Fresh red or green chilli- 1 no.

SPICES:
Cinnamon - 1 inch sized stick
Cloves- 4 to 5 no.s
Whole pepper - 20 no.s
Star anise - 1 no.
Cardamom- 1 no.
Cashews- 10 no.s

METHOD:
1. Soak basmati rice in cold water. Cut carrot, beans,peas,cauliflower,onion. Cut chilli, ginger, garlic. Prepare and set ready the needed spices.


2. In a pressure cooker, add 2 table spoon of ghee and once it heated, add all the spices(cinnamon,cloves,cardamom,star anise,pepper) and fry for a minute.

3. Now add cashews and fry till it colour changes.

4. Now add onions and fry for 3 to 4 minutes. Please keep stirring constantly, so that it doesn't get burnt.

5. Now add ginger, garlic,chilli and fry for another minute.

6. Now add all the cut vegetables(Carrot,beans,peas and cauliflower) and fry for 4 to 5 minutes.

7. Now add the soaked basmati rice and mix gently with the veggies without breaking the rice.Fry for a minute.

8. Now add 1/2 cup milk and 2 cups water and mix well. Add required salt .

9. Cover the lid and cook for 2 whistles in medium high. Then switch off the gas. Wait until the pressure releases on itself. Tasty veg pulao is ready !.. Serve with moong daal.
