Aloo gobi is a punjabi dish using potato and cauliflower that goes well with rice or rotti. Usually, aloo gobi is made ,by deep frying potato ,cauliflower and adding spices.. Instead of deep frying, I made it little healthy by using less oil as possible..
Serves - 2 -3 people
Preparation Time - 15 minutes
Cooking Time - 20 minutes
INGREDIENTS:
Cauliflower - 1 nos(Diced into florets.Comes around 2.5 cups of florets)
Potato- 2 nos.
Ginger - 1.5 tablespoon(Diced finely)
Garlic - 3 to 4 cloves
Tomato - 1 no.(Chopped finely)
Onion- 1/2 no.(Chopped finely)
Cumin seeds - 1 tablespoon
Turmeric powder - 1/2 teaspoon
Chilli powder - 1 teaspoon
Coriander powder - 1 teaspoon
Garam masala powder - 3/4 teaspoon
Salt- As required
Asafoetida powder - As required
Lemon juice- Few drops.
Oil- 2 tablespoon + 2 teaspoon
METHOD:
1. Wash potatoes and cut in to cubes and put in cold water. It prevents the potatoes from turning dark due to oxidization. Cut cauliflower in to florets. Cut ginger,garlic, tomatoes, onion.
2. In a pan, add 2 tablespoon of oil. Add diced potatoes, pinch of salt and turmeric powder. Keep stirring continuously, so that it doesn't get burnt. Fry, till the potatoes turn golden brown.It takes about 7 to 8 minutes.

3. In mixer, grind ginger and garlic with 1 tablespoon water in to a paste.
4. In the same time , in a pan add sufficient water, pinch of turmeric powder and some salt . Allow it comes to boil and switch off the flame. Then add cauliflower florets and allow it to stay in the boiled water for about 5 minutes. This process is called "Blanching".
5. Drain the water completely and set aside.
6. In a pan, add 2 teaspoon oil. Then add cumin seeds. Once it crackles add onion, pinch of salt and fry till it turns golden brown. It takes about 5 to 6 minutes. Keep stirring constantly.
7. Now add ginger garlic paste and fry for another 2 minutes.
8. Now add turmeric powder, red chilli powder, coriander powder and garam masala powder.
9. Now add cauliflower and potato and mix well. Add required salt(remember that you have already added some salt when cooking potato, and frying onion, So add salt as per required) . Add 1/2 cup water. Close the lid and cook for 10 minutes , until potato and cauliflower turns soft. Keep stirring occasionally, so that it doesn't get burnt.
10. Once potato and cauliflower cooked, switch off the gas. Add asafoetida powder and also add few drops of lemon juice and mix well. Aloo gobi is ready. Now serve with rotti or rice.
