Brinjal Kadhi

This is a simple and easy kadhi , that can be done in few minutes. It goes well with rotti or white rice.

Serves: 2 people
Preparation Time: 10 minutes
Cooking time:15 minutes.

INGREDIENTS:
Brinjal - 1 cup(Diced big in size.. Too small size would get mashed in yogurt sauce.. )
Onion- 1 cup(Diced)
Ginger - 1 inch sized
Garlic - 4-5 cloves
Plain yogurt or curd - 1 cup
Turmeric powder - 1/2 teaspoon
Red chilli powder- 1 teaspoon
Coriander powder - 1 teaspoon
Coriander leaves - for garnishing
Mustard - 1 teaspoon
Cumin seeds - 1 teaspoon
Fenugreek seeds - 1/2 teaspoon
Asafoetida powder - a pinch.
Oil- 5 teaspoon


METHOD:
1. Dice onion, brinjal. Prepare and set ready ginger and garlic.

2. In a pan, add 2 teaspoon of oil, and add onion,ginger and garlic.Add a pinch of salt and sugar and mix well. Fry till they turn to golden brown color.It takes about 4-5 minutes.

3. Now set aside the items and allow it to cool completely. Now, grind them in to a smooth paste.

4. In the same pan, add a teaspoon of oil and fry brinjal for about 5 minutes , till it colour changes. No need to add any water.

5. Set brinjal aside. Now in the same pan, add 2 teaspoon of oil , add mustard and cumin seeds.

6. Once it crackles , add fenugreek seeds.

7. Now add the onion paste and mix well.

8. Now add turmeric powder, red chilli powder and corriander powder and mix well.

9. Cook for about 4 minutes, till the raw smell of spice powder is reduced. Then add 1/2 cup of water. Allow it to boil.

10. Keep the flame to medium sim and now add 1 cup of plain yogurt or curd and keep stirring continuously for 2 minutes . Do not leave stirring , as the kadhi would break if you stop. 

11. Now keep the flame to full sim and now add the brinjal and mix gently and turn off the gas.No need to cook for long, as the brinjals are already cooked.

12. Keep it covered for about 5 minutes, so that brinjal will get marinated with the yogurt sauce.

13. Now garnish with fresh coriander leaves.

14. Brinjal kadhi is ready !.. Serve with rotti or rice.
