Brinjal Gosthu

Brinjal gosthu is a tasty side dish that goes well with pongal . It can also be made as side dish for chappathi as well.


Preparation Time: Under 25 minutes
Serves: 2 people

INGREDIENTS:

Brinjal - 2 to 3 no.s
Onion - 1/2 cup chopped
Tomato - 1 chopped.
Jaggery - a pinch
Tamarind - small gooseberry sized.
Coriander leaves - for garnishing
Oil - 2 teaspoon

TO ROAST AND GRIND:

Coriander seeds - 1.5 table spoon
Channa dal - 1.5 tablespoon
Dry red chilli or green chilli - as required

SEASONING:

Oil - 2 teaspoon
Mustard - 1 teaspoon
Channa dal  - 1/2 teaspoon
Urad dal - 1/2 teaspoon
Dry red chilli - 1 no.


METHOD:

1. In a pan add 2 teaspoon of oil. Add coriander seeds ,channa dal , dry red chili or green chilli. Fry, till nice aroma comes. Allow them to cool. Now  grind them by adding water in to a smooth paste.



2. Now add another 2 teaspoon of oil. Now add  mustard, channa dal, urad dal and dry red chilli. Then add onions and fry till they get translucent. Now add tomato, brinjal . Add turmeric powder and salt.


3. Now add tamarind water. Cook till the brinjal gets soft.  Also add the paste, which you prepared in step 1. Add water to desired consistency. Allow it to boil for 3 to 4 minutes. Add some jaggery. Mix the contents well. Garnish with coriander leaves. Serve hot with pongal !.
