Vegetable stew is a mild spiced gravy with vegetables cooked in coconut milk and spices. It is an excellent side dish for Aapam or Idiyappam . I have given an easy way to make this recipe. Please try and leave your comments.
Preparation Time: Under 15 minutes
Cooking Time: 15 minutes
Serves : 2-3 people
INGREDIENTS:
Carrot - 1/2
Potato - 1 medium sized
Cauliflower florets - 5 to 6 no.s
Chayote - 1/2 cup chopped
Beans - 10- 12 no.s
Onion - 1/2 cup chopped in thin stripes
Curry Leaves - a bunch
Green Chilli - 2 no.s slit length wise
Ginger - 1 inch chopped fine
Black pepper powder - 1/2 teaspoon
Salt - as required
Coconut Milk - 200 ml
Water - 2 cups
SEASONING:
Coconut Oil - 2 tablespoon
Cinnamon - 1 inch sized
Cloves - 2 no.s
Bay Leaves - 1
Fennel Seeds -1 teaspoon
METHOD:
1. Chop carrot, potato, cauliflower, beans , chayote in little bigger pieces. In a pressure cooker, add the chopped vegetables( Without onion) , 1/2 cup of water and some salt. Pressure cook in high flame for 3 whistles and switch off the flame.
2. For this recipe, I used canned coconut milk as we dont get fresh coconut here in Taiwan. Take 200 ml of coconut milk and dilute it into thin watery milk, by adding 2 cups of water .
3. In a pan, add coconut oil(You can also use normal oil ) . Add items mentioned in the SEASONING section. Now add chopped onion,ginger, curry leave, green chilli and fry for few minutes. Do not let the onion to change color, as it will affect the color of the stew.
4. Now add cooked vegetables and fry for 1 to 2 minute. Sprinkle some black pepper powder and add required salt. Now add the diluted thin coconut milk. Keep the flame in medium and keep stirring, until the coconut milk starts to boil. Adjust the water consistency. The stew should be very thin. Switch off the stove.
5. Vegetable Stew is ready !. Serve with Aapam or Idiyappam
