Channa Dal Paratha

Channa Dal paratha - A popular breakfast from Punjab. Channa dal /Split  bengal gram  is cooked and mixed with spices and stuffed inside rotti . It can be served with Pickle or Yogurt. Another way of serving ,  is  with rice kheer (sweet). Dal paratha with sweet rice kheer gives a great combination. I first experienced this taste at my friend's home .  My friend Priyanka from Maharashtra made this wonderful dal paratha and rice kheer. At first , I was bit quizzical about, how a dal paratha will go with a sweet. But after tasting it, I was really amazed at how delicious the parathas were with rice kheer. People who like sweet and spicy combination, would definitely love this recipe !


Preparation Time: 30 minutes ( Not Including Soaking Time)
Cooking Time: 45 minutes
Yields - 10 Parathas

INGREDIENTS:

Channa Dal/Split Bengal Gram - 1/2 cup
Whole Wheat Flour - 2 1/2 cups
Garam Masala - 3/4 teaspoon
Amchoor(Dry Mango) Powder - 1/2 teaspoon
Cumin Powder - 1/2 teaspoon
Kashmiri Red chilli powder - 1/2 teaspoon
Ajwain(Omam) - 1/2 teaspoon
Turmeric powder- 1/4 teaspoon
Salt - As required

METHOD:

1. Wash, rinse and  soak Channa dal for 3 to 4 hours. Pressure cook with 1 cup water in medium flame for 2 whistles and switch off. Open the lid after the pressure settles.


2. In a strainer, strain the excess water in channa dal , without mashing it. Leave it in the strainer for 15 to 20 minutes, till all the water from the channa dal is filtered .


3. After that, grind the channa dal in mixer for 1 to 3 seconds. Do not grind for longer time , as it will let out water and turn to a paste. Just grind in pulse mode for 1 to 3 seconds.


4. Now add Turmeric powder, salt, kashmiri red chilli powder, ajwain seeds,cumin powder , garam masala, amchoor powder and mix well with channa dal.


5. In the meantime, in a large bowl, take wheat flour. Add some salt, oil. Mix water and make smooth , but also firm dough. The dough should not be too soft or too firm . Allow the dough to rest for 30 minutes. Then make lemon sized balls from the dough.


6. Take a dough and flatten it to the size of your palm using rolling pin.


7. Place approximately 1 tablespoon of channa dal masala prepared in step 4.


8. Cover it on all sides as shown in below picture. Sprinkle some wheat flour over it.



9. Now turn it to the other side and sprinkle some more wheat flour, and very gently flatten it using rolling pin. Do not give any pressure, as the filling would come out. Flip the other side and apply some wheat flour and flatten it again. Keep doing it, until you start seeing the filling slightly , as shown in below picture.


10. In a tawa, cook the parathas by adding oil or ghee , until you see black spots on it. Serve it with any favorite side dish of your choice !
