Foxtail Millet Biryani

A simple and healthy foxtail/Thinai(tamil)/Kangni(Hindi) millet biryani . Foxtail millet is rich in protein with very less fat . It has good amount of fiber, calcium,iron,magnesium and carbohydrates. It doesn't have sugar in any form. Hence it is highly recommended weight loss food.


Preparation Time: Under 15 minutes(Not including soaking time)
Cooking Time: Under 15 minutes

INGREDIENTS:
Foxtail Millet - 1/2 cup (Soak for 30 minutes)
Veggies - 1 cup(Use any veggies of your choice. I used carrot,peas,capsicum,beans)
Onion-1/2 cup
Ginger - 1 inch size chopped finely.
Garlic - 2 to 3 no.s chopped finely
Cinnamon,cloves,star anise, bay leaves - as required
Tomato - 1 finely chopped
Turmeric powder - 1/2 teaspoon
Red chilli powder - 1/2 teaspoon
Biryani masala - 1 teaspoon
Salt - as required
Water - 1 cup
Oil - 3 teaspoon

METHOD:

1. In a 2 liter pressure cooker, add some oil. Fry cinnamon,cloves,star anise and bay leaf.

2. Now add onions and a pinch of salt and fry till they turn translucent.


3. Now add ginger and garlic and fry for few minutes. Then add all the veggies including tomato. Add required salt,turmeric powder and chilli powder and mix well.


4. Now add biryani masala and mix well.


5. Now add the millet to the veggies and mix well. The millets should be washed and soaked for 30 minutes prior to cooking.


6. Add 1 cup of water and allow the contents to boil.


7. Cover the lid and cook in high for 3 whistles. Wait for pressure to settle and then open the lid.


8.Millet biryani is ready !.

9. Serve with raita and papad !.
