Millet Dosa

This dosa is very healthy and made  with just millets and urad dal. No rice added. I used foxtail millet and barnyard millet. You can use any millet of your choice. Do try and leave your comments !


Preparation Time : Under 30 minutes( Not including soaking time)
Cooking Time: Under 30 minutes
Yields : 14-15 dosas.

INGREDIENTS:
Foxtail millet ( Thinai) - 1 cup
Barnyard millet(Kuthiraivaali) - 1 cup
Whole white urad dal - 1/2 cup
Fenugreek seeds - 2 teaspoon
Salt - 3/4 teaspoon

METHOD:

1. Soak, millet and fenugreek seeds separately overnight. Next day, soak urad dal for 3 hours.


2. Drain the water from millets. Grind them first with fenugreek seeds in to a smooth batter. When grinding millets, do not add more water. It requires less water to grind. Then, grind the urad dal by adding sufficient water and mix it with millet batter. Add required salt. Allow it to ferment for 4 to 5 hours. The batter raises up well as in picture below.



3. Add some water and mix the batter well and make dosas . Serve with sambar or chutney of your choice. This dosa will come out very crisp and tasty !.
